We loved it and snatched it up immediately. In the following weeks of COE tastings, Patricio's coffee rose above and secured 2nd place in the Traditional category.\u003c\/p\u003e\u003cp\u003eThe cherries were hand harvested at peak ripeness, then rested in sealed bags for three days at the wet mill. After that fermentation, the cherries were pulped and held in bags again for three more days, then washed thoroughly four times. A tenacious bit of mucilage remained, so this lot is considered semi-washed.
